Tonno in Umido

6 Tuna Steaks
1kg Vongole (Clams)
200g Polpa di pomodoro 
200g Sliced Onions
Dry White Wine
Fish Stock
100g diced Garlic
Olive Oil
Salt & Pepper
N.B. Items in bold are available at all MF outlets.
Marinate th Tuna steaks in olive oil, wine and herbs and the clams in wine, brandy and polpa. 
Fry onion and garlic in olive oil. Add the marinated vongole along with the remaining juices.
Add fish stock and simmer for 5-10 minutes to reduce. Add parsley and oregano.
On a hot griddle, grill tuna steaks (previously marinated in olive oil, wine and herbs) for 2 minutes on each side. Add salt and pepper to taste. Keep warm.
Heat oven to 200C. Place fish in oven dish and pour vongole sauce on top. Sprinkle with oregano and cook for 10 minutes.
