Risotto with Seafood

500g Rice Arborio 
50g Chopped Onions 
20g Garlic, finely chopped 
50ml Dry White Wine 
1kg Seafood Mix 
20g Parsley, finely chopped 
250g unsalted Butter 
150ml Fish Stock (can be made from cube)
Marjoram, Oregano, Mint
Salt & Pepper

Melt half the butter in a deep pan and fry onion and garlic. When coloured add rice and stir with wooden spoon.
Gradually add fish stock. In another pan melt rest of butter. Stir in seafood and heat thoroughly. Add wine and half of the marjoram, oregano and mint.
Stir seafood into rice mixture when rice is done. Sprinkle freshly chopped parsley and pepper and salt if needed. Mix in rest of herbs. Serve immediately.
Add some chopped tomatoes and olives in the first stage, when cooking rice.
