Shrimp and Rice Salad

400g shrimps 80/120, cooked and peeled
250g sliced onion 
200g green peas
4 tbsps finely chopped red, yellow and green bell peppers
1 1/2 cup cooked rice, cooled
1/2 cup diced celery
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp celery seed
1/2 to 3/4 cup mayonnaise (optional)
2 tbsps extra virgin olive oil
1 tbsp lemon juice
lettuce leaves and tomato slices
N.B. Items in bold are available at all MF outlets.
Combine shrimps, celery, onions, peas and bell peppers. Sprinkle with salt, pepper and celery seed.
Combine shrimp mixture with rice; add mayonnaise, olive oil and lemon juice and mix gently.
Taste and adjust seasonings. Serve on lettuce leaves and tomato slices. Can be served on its own or as a side dish.
