Spinach and Anchovy Pie

 

 

1kg Spinach Leaves
400g sliced Onions
200g Baby Carrots
200g Peas
150g Anchovies
200g Chopped Olives
100g Capers
1-2 tins of Tuna
1 tin Tomatoes, peeled
Marjoram, Parsley, Mint, Basil
Olive Oil for frying
2 Eggs, beaten
Salt and Pepper

Fry onion in olive oil. Add anchovies. Squeeze spinach dry and add to anchovies along with all other ingredients.
 
Add a beaten egg and let mixture cool.
 
Roll out *pastry and line pie dish with it. Fill with mixture and cover with pastry.
 
Brush pie with a beaten egg and place in medium-hot oven for 1 hour.

1 pkt Margarine
500g Plain Flour
Pinch of Salt
Cold Water
 
Using an electric food processor siev margarine and plain flour. Add salt and enough cold water to bind.
